煮色仕上げ（にいろしあげ）とは、銅合金の表面の化成処理方法の一つ。銅および様々な銅合金を薬液の中で煮込むことにより、表面に酸化皮膜を形成させ耐候性を付け、独特な発色の表面に仕上げることである。 日本の伝統工芸で象嵌や木目金などのを使った金属工芸品の仕上げに使われ、「煮込み」・「煮上げ」・「煮色着色」などとも呼ばれる。 英語では Patination、Chemically-induced copper patinas、Chemical patination等と言われる。
